About 15 years ago came to my wife a new venture, which consisted of making and selling ice cream; An experience that changed our lives both personally and professionally. Once we decided to start this new project, we received the best training from ice cream artisans in Michoacán, Mexico, who are renowned worldwide for their exceptional handcrafted ice creams,, which are famous for their great variety of fruits and flavors.
It all starts in Gainesville, Georgia in a 150-square-foot space, which only fit the ice cream maker, a freezer and one person. It was fun to see us running when someone had to come and go, because two people couldn’t be in the work area at the same time. After only one month, we were happy because we already had 10 stores; in which we distributed one of our products: The Popsicles… That was our first achievement.
The success of our products was growing exponentially, and with great pleasure for the palate of our customers, which was increasing day by day. Seeing the great acceptance we had, we decided to take giant steps and enter the manufacture of our main product: The Milk, on which our success is based and that thank God, today is patented and is what represents our Brand in the world of ice cream.
At this stage of our venture, our eldest daughter Allie enters, she already had a degree in Chemistry, and she took on the task of perfecting our formula until she managed to make the delicious product we have today. Much of our success is thanks to her, who was part of everything we have achieved professionally today.
Like most of all ventures, we had very difficult seasons in which we did not see a solution, moments where the maintenance of our company was more complicated every day, in this phase of our lives, our youngest daughter Vale enters, she was the baby of the family and our engine to wake up and not decay in the face of adversity. Knowing that we had the responsibility to take it forward, was the engine for every day to fight to make this project, how spectacular and prosperous it is today.
One day, between so much work and beautiful moments professionally, comes to our hands a contract with a chain of stores, which was interested in placing our products in their establishments; what happened, in the blink of an eye to have more than 300 stores and presence in 3 states.
Eager to continue the growth of our business and be able to bring our products to more palates in the world, we made the great decision to open a new factory in the beautiful city of Orlando, Florida. This decision helped us to compensate for the unproductive season that we faced due to climatic issues in Georgia; Although as we have mentioned, we are always grateful for all the triumphs obtained in this great place.
Arriving in Florida and seeing the great diversity of cultures and people that inhabit the cities of Orlando and Kissimmee motivated us to take on a new challenge; that of going from being only manufacturers to also becoming marketers; We decided then to take the big step of opening our first large point of sale to the public in order to reach these new markets and get closer to our customers.
The previous decision faced us with a great challenge… to modify our trademark and the way we approach our interaction with customers, we wanted to transform the experience of enjoying a rich and delicious ice cream; That’s when we decided to incorporate games and technology to create a new experience in sharing with family, couple, friends and even those beings so important today in our homes, our pets.
The topping in the ice cream was missing, culminating all this transformation with a change in the name of our company, then from the brilliant mind of my wife came “BAJO ZERO“, we were frozen … of happiness, and we knew that we were ready to launch ourselves into making this dream come true.
We found our first location, in an excellent place with an extraordinary projection, it was a place that was uninhabited for more than 7 years and that was waiting for BAJO ZERO to place its projects in it. We started designing on blank sheets, in pencil; we also made drawings in Paint trying to capture the large number of ideas that came to me under the shower every morning. In this way begins the incredible task of remodeling and adaptation of our ice cream shop, your ice cream shop, the production line was made, the position of each of the equipment and the location of the space for sale to the public was decided, until finally our beautiful creation was ready, which will be the pioneer of one of the first franchises of BAJO ZERO that we will find around the world.
